Please change it yourself in QA_3_3 and merge to master. Magic will happen to update http://www.phpmyadmin.net/documentation/Documentation.html#faq7_3 from master.
I've done something wrong I guess : I was looking for the Documentation.html file in the phpmyadmin/website project, but couldn't find it. Eventually I came across it in the localized_docs project, and changed the file, but it turns out to be in the output folder, so it will probably be overwritten next time the documentation is generated. Should I have modified all the files in the po folder? What about the files in the pot directory? Or am I changing it in a complete wrong place/way?

Hi Dieter, when I wrote "change it yourself in QA_3_3 and merge to master" I meant the "phpmyadmin" repository, not the "website" one. There is no distinct Documentation.html to maintain in a second repository.

My bad, I overlooked the Documentation.html file in the phpmyadmin project. I was looking for a doc(umentation) folder, and only found the documenation-gsoc folder, so I started looking elsewhere.

Yes :-).
The documentation master is in phpmyadmin repository (Documentation.html). It is daily pushed to website from it (using my cron jobs, available in scripts/website).
The localized_documentation contains just translations of the documentation (done using Po4a).
